Ingredients :

Drained and Rinsed Corn                -    1 Can  or 1.5 cup
Drained and Rinsed Kidney Beans (Rajma)        -    1 Can  or 1.5 cup
Finely diced Cucumber                   -    ½ (Half)
Crumbled feta                                -    ¾ cup
Chopped cilantro or parsley                  -    1 cup
Chopped Celery or Green Onions                    -    ½ cup



For Dressing

Lime Juice            -        ½ lime
Olive Oil      -        2 tbsp
Mustard                -        1 Tsp
Garlic clove        -        1
Cumin                  -        1-2 tsp
Dried Oregano    -        ½ Tsp
Salt & Pepper    -        To Taste

Instructions:-

With the details ingredients, it is self-explanatory what needs to be done. Still, elaborating the process step by step.
Stain Kidney Beans (Rajma) and corn.
Finely dice up the cucumber and chopped parsley finely.
Chop Green Onion finely.
Time to take a big bowl and put everything including rajma and corn. Now crumble in the feta and give a good mix.
Take a small bowl and add all dressing ingredients. Mix them well and taste once.
Then mix dressing ingredient with all the veggies.

How to make Galouti Kebab with Rajma

You must have not tried this amazing galouti kebab recipe which is made using the nutritious rajma. This is the healthy and tasty rajma recipe.

Ingredients

Kidney Beans (Red) - 2 cups
Cashew Nuts         - 15 (Full size)
Sunflower seed - 2 tbsp
Poppy seeds (khus khus)         - 1 1/2 tbsp
Caraway seeds (shahi jeera) - 1 tps
Green cardamoms         - 8
Black cardamoms         - 6
Cloves         - 4
Cinnamon         - 2 inch stick
Saffron (kesar)         - a pinch
Kewra water         - 1/2 tsp
Pure ghee         - 2 tbsp + for shallow fry
Chopped Ginger - 1 inch piece
Chopped Garlic - 10 cloves
Finely chopped Green chillies        - 6
 Grated Mawa (khoya) - 4 tbsp
White pepper powder - 1 tsp
Salt                 - to taste
Lemon juice           - 1 tbsp
Fresh mint leaves          - 1-2 sprigs
Onions cut into roundels - 2 medium size


Method

1) Take a cooker and boil soaked rajma (Soak for overnight) with the good quantity of water until it gets soft.
2)  First, dry roast cashew nuts, khus-khus, and sunflower seeds together. and then make a fine paste adding little water in a mixer.
3) Dry roast other ingredients like Green cardamoms, Black cardamoms, cinnamon, cloves, caraway seeds and make a fine powder.
4) Take 1/2 tsp kewra water and soak saffron.
5)  Now take a pan and put two tablespoons of ghee, following with ginger and garlic. After saute for few seconds add green chilies and saute again for one minute.
6) Time to add rajma and cook for 3-4 minutes.
7) Now add cashew nut paste and mix well.
8) Time to add khoya, white pepper powder and salt as per taste. Continue stir-fry.
9) Keep the rajma aside for cooling. Then mash it into a fine paste. add spices powder and soaked saffron. Check salt. Add lemon juice and give it a good mix.
10) Make equal portions of the mixture, give a round shape and press them slightly.
11)  For Shallow frying, heat up ghee in a pan and cook properly from both the sides.
12)  Use mint leaves and onion rings for garnish and serve hot with your preferred chutney or ketchup.

Gur (jaggery), grated                                   -          2 tablespoons
Elaichi powder (cardamom)                        -          ¼ teaspoon
Coconut grated                                           -          ¼ cup

For serving
Ghee

 The process to make sweet idli recipe
1)      Take a small pan and put it on the heat. Then add yellow moong dal and dry roast for 5 – 7 minutes on medium flame. Stir continuously.
2)      Once done, then leave the mixture to cool down properly.
3)      Then add cardamom powder, jaggery, coconut and mix them well using your hands. Then keep aside.
4)      Take an idli mould and grease it using a little oil and then put 1 tablespoon of idli batter in each mould.
5)      Then add one teaspoon of moong dal-jaggery stuffing at the centre of each mould and then cover the stuffing with a teaspoon of batter.
6)      Now, steam the idlis in a steamer for around 10 to 12 minutes
7)      Once cooked properly, then leave them to cool down. Then demould all the idlis.
8)      Repeat the same steps to prepare the remaining idlis.
9)      Place the prepared idlis on a serving plate and serve them with pouring a spoon of ghee over it.

4)      Once done, then pour the batter into a bowl and then add salt. Give a good mix.
5)      Now, cover the batter using a muslin cloth or lid and keep it aside to ferment for around 8 hours in warm place.
6)      After fermentation, give a good mix to the batter.
7)      Take an idli mould and grease it using a little oil and then put a tablespoon of idli batter in each mould.
8)      Then steam the idlis for around 10 to 12 minutes.
9)      Repeat the same steps to make the remaining idlis.
10)   Once done, then place the idlis on the serving tray.
11)   Healthy and nutritious idlis are ready. Serve them with coconut chutney and sambar.

Golden Rasmalai Recipe: A must try Indian sweet

Cottage cheese (paneer)             -    250 gram
Sooji (semolina)                         -    3 tablespoon
Maida (refined flour)                  -    2 tablespoon
Cornflour                                    -    1 tablespoon
Sugar                                           -    2 ½ cups
Milk                                            -    2 litres
Khoya                                         -    300 gram
Saffron                                        -    ½ teaspoon
Reetha powder with water          -    2 tablespoons
Fresh mint                                   -    1 teaspoon
Crushed pistachios                      -    2 teaspoon
Crushed almonds                         -    1 teaspoon
Crushed pine nuts                        -    1 teaspoon
Gold vark                                     -    3 pieces

The process to make Golden Rasmalai

1) Take a big bowl and add fresh paneer, sugar, flour and all other ingredients. Mash them well.
2) Make small size balls from the mixture.
3) Make sugar syrup using a half cup of sugar with 1½  of water and then add small prepared balls into the sugar syrup. Cook them for around 10 minutes and keep aside.

For Rabri:

1) Take milk in a pan and cook it until the milk reduces to 1 ½ litre. Then add khoya, sugar, reetha powder and saffron. Continue to cook or around 10 to 15 minutes.
2) Once done, switch off the flame and leave the rabri to cool down.

Final process

1) Pour the rabri into a bowl and add all the prepared balls into it and refrigerate to chill.
2) Golden Rasmali is ready. Garnish it with crushed nuts and sprinkle mint from the top. Put Golden vark and serve chilled.

Tips for making Idli batter

Idli is one of the easiest recipes that can be ever made. In fact, you can even make different types of Idlis like Ragi Idli, Poha Idli, Rava Idli, Oats Idli, etc. Trust me, all these Idlis taste amazing. Relish them solely or along with coconut chutney. But, there’s always a key to make delicious Idlis, and it is the batter. Let’s look at the tips for making Idli batter.

Always keep the batter bowl in a warm place like near the heater or any other warm place in the kitchen.
When it’s too cold outside, you can preheat the oven at a low temperature for about 10 minutes. Switch off the oven after 10 minutes and then keep the bowl inside. If the oven at your house has lights, then make sure you keep the lights on and then place the bowl inside.
At times, you can also add a bit of sugar to the batter. This helps in fermenting the batter.
Don’t add salt to the batter as it delays the process of fermentation. Though if at all you want to add salt then you can use rock salt.
Another tip is to keep the batter for a longer time like for at least 14-24 hours.
If at all the batter doesn’t get doubled or tripled, tiny bubbles should definitely be seen. Also, make sure that you should get the sour fermented aroma from the batter.
When the batter isn’t fermented, you can add 1/4 to 1/2 teaspoon of yeast to the batter. Add it 30 to 45 minutes before you steam the idlis. Make sure that you use all the batter at once. Also, remember not to refrigerate the batter else it will get too yeasty.
During the cold season, add 1/4 to 1/2 teaspoon of baking soda and then leave it to ferment.

Tips and guidelines to make perfect Pulao

Nothing can be made perfectly at the first go and so, are the recipes. When you cook something for the first time, the chances are that it may not be perfect like how our mothers cook. And so, tips and guidelines help amateurs a lot. Listed below are some tips and guidelines to make perfect Pulao.

No. 1 to key to making perfect Pulao is using long grain Basmati rice. The fragrance and taste of Basmati rice is amazing. Try making Pulao using the normal rice and then make it using Basmati rice. You yourself will see the difference in taste and fragrance both.

Once the rice is cooked, pour a tablespoon of oil in it. This will prevent rice from getting sticked to each other.

The Pulao will taste better with your choice of vegetables. You can also add corn kernels or baby corn, capsicum, broccoli, etc. if you like these vegetables.

Another tip is to rest the Pulao for 5 minutes after it is cooked. Doing this will further not let the grains break while fluffing it.

For carrot halwa

Carrots                                              -     ½ kg

Full flat milk                             -      2 cups

Skinned and powdered cardamom (Elaichi)        -     3 to 4

Ghee                                      -     2 tablespoon

Khoya                                               -    ½ cup

Mixed nuts (cashew, almonds & Pista)                 -    Handful

For coffee Gulab Jamun

Milk powder          - 1 ½ cup

Maida           - ½ tablespoon

Khoya           - 1 cup

Ghee           - To deep fry

Sugar (For sugar syrup)      -       2 cups

Saffron                  -  Few

Coffee   Powder         - 2 teaspoons

Honey                  - 4 teaspoons


The process to make Carrot halwa with coffee gulab jamun

1) Take a small pan and add all the nuts. Dry roast them until crunchy. Keep them aside to cool down and then chop them.

2) In a deep pan add milk and wait until milk starts to boil.

3) Then add grated carrots and stir properly.

4) Cook the mixture until milk evaporates completely. Once done, then add khoya into the mixture. Mix well.

5) Then add sugar and stir nicely. Sugar will release a lot of moisture. Cook the mixture till half of the moisture evaporates.

6) Then add ghee. Stir well and continue to cook till the entire moisture evaporates and halwa becomes thick.

7)  Then add grated khoya (it is optional). Stir and cook further for 2 -3 minutes.

8) Your carrot halwa is ready. Garnish with chopped nuts and serve with prepared coffee Gulab Jamun.
