The Pride of Rajasthan - Pyaaz Ki kachori

Summary:- If you are in Rajasthan and haven’t tried this pyaaz ki kachori, then your trip is surely incomplete. These kinds of compliments you must have always got from people. And, somehow this is true too.

So, here is the full recipe we have shared. You can make these kachoris at your home too.

Ingredients required:-

Onion - 1
Garam Masala Powder - ½ Tsp
Green Chilli - 1
Garlic paste - 1 Tsp
Besan (Gram Flour) - 1 Tsp
Asafoetida (Hing) - A Pinch
Mustard Seeds - ½ Tsp
Boiled Potato - 1
Sugar - ½ Tsp
Red Chilli Powder - ½ Tsp
Ginger Paste - 1 Tsp
Dry Mango Powder (Amchur) -      1 Tsp
Coriander Seeds - 1 Tsp
Cumin Seeds - ½ Tsp
Refined Oil - As Required
Water - ½ Cup

For Dough:-

All Purpose Flour - 1 Cup
Salt - As Required





The Process to make Pyaaz ki Kachori


  1. First, take a deep bowl, and add All purpose flour, refined oil, salt and make a stiff dough using appropriate water. Once done then keep it aside.
  2. Meanwhile, chop onions and green chillies and mash boiled potatoes. Keep both of them in separate bowls.
  3. Now, take a pan and add refined oil and heat the oil on medium flame. Then add ingredients like ginger paste, garlic paste, cumin seeds, asafoetida, mustard seeds, and sugar. Mix them well and saute for few minutes.
  4. Then add chopped onion, coriander seeds, green chillies, and salt into the mixture and mix them well.
  5. Wait until onion turns little brown then add mashed potatoes, red chilli powder, amchur powder, gram flour, garam masala, and sugar and mix the mixture properly. Wait until oil starts extracting from the mixture and then put the flame off.
  6. Now take the dough and divide into equal portions. Take one portion and roll it on the flat surface. Then put onion mixture at the center. And seal the edges by joining together. Then again roll it as per your desired length. Repeat the same step with the remaining stuff.
  7. For deep-fry, take a pan and heat the oil on medium flame. Once the oil is heated then add Kachoris into the oil and deep-fry them until golden brown.
  8. Pyaaz ki Kachori is ready. Serve them on chutneys.

Jalebi infused with Vanilla flavored rabdi


Jalebi definitely isn't for health conscious people. But, if had one bite of it, you can't resist for sure. Especially, when Jalebi is infused with Vanilla flavored rabdi. The taste of the Jalebi just gets doubled. Also, one can give a traditional touch to the Jalebi by infusing in cardamom and rose water.

Ingredients:
Jalebi:
  • 1½  cups Maida (plain flour)
  • 3 tablespoon rice flour
  • 1/2 cup plain yogurt
  • Salt as required
  • 2 cups Water
  • 10-15 Saffron strands
  • A pinch of Yellow coloring (optional)
  • 1 tablespoon Rosewater
  • A pinch of Sugar
  • 1/4 teaspoon baking soda
  • Pure ghee for frying

Sugar Syrup:
  • 1 1/2 cups sugar
  • 2/4 cup water
  • 2-3 cardamom pods
  • 1 tablespoon rose water

For vanilla rabdi
  • 2 cups of milk
  • 3 tablespoon raw sugar
  • 1 vanilla pod + scraped beans

Making of Jalebi:
  1. Take a bowl and add Maida, yogurt, rice flour, salt, saffron, yellow color, rosewater, and water. Mix all the ingredients well and prepare a batter. Leave it covered aside for 6 hours at room temperature or overnight in a fridge.
  2. Add baking soda to the mixture and keep it aside for 20 minutes.
  3. Transfer the batter into a squeeze bottle with a fine tip opening.
  4. Heat the ghee in a kadai. Once the ghee is heated, pour the batter of Jalebi forming a spiral shape. Let the Jalebis get fried on low heat.
  5. Meanwhile, take a bowl and heat the water along with sugar. Add cardamom and let it thicken till 2 string consistency.
  6. Dip all the Jalebis in the sugar syrup and let it stay for about a minute.

Preparing the Rabdi:

  1. Take a pan, heat the milk, sugar, vanilla beans, and pod on a low flame. Let the milk thicken.
  2. Once thickened, take the Jalebi in a bowl and pour the vanilla flavored rabdi over it.

This is the biggest question of all time, after graduation, most of the students get confused as which course to choose for post-graduation. Limitation of PGDM Course over MBA Course

PGDM stands as Post Graduation Diploma in Management. Now, most of the students get confused when they heard the word "diploma" as they have a view that PGDM is a diploma, not a degree.
