Jalebi infused with Vanilla flavored rabdi


Jalebi definitely isn't for health conscious people. But, if had one bite of it, you can't resist for sure. Especially, when Jalebi is infused with Vanilla flavored rabdi. The taste of the Jalebi just gets doubled. Also, one can give a traditional touch to the Jalebi by infusing in cardamom and rose water.

Ingredients:
Jalebi:
  • 1½  cups Maida (plain flour)
  • 3 tablespoon rice flour
  • 1/2 cup plain yogurt
  • Salt as required
  • 2 cups Water
  • 10-15 Saffron strands
  • A pinch of Yellow coloring (optional)
  • 1 tablespoon Rosewater
  • A pinch of Sugar
  • 1/4 teaspoon baking soda
  • Pure ghee for frying

Sugar Syrup:
  • 1 1/2 cups sugar
  • 2/4 cup water
  • 2-3 cardamom pods
  • 1 tablespoon rose water

For vanilla rabdi
  • 2 cups of milk
  • 3 tablespoon raw sugar
  • 1 vanilla pod + scraped beans

Making of Jalebi:
  1. Take a bowl and add Maida, yogurt, rice flour, salt, saffron, yellow color, rosewater, and water. Mix all the ingredients well and prepare a batter. Leave it covered aside for 6 hours at room temperature or overnight in a fridge.
  2. Add baking soda to the mixture and keep it aside for 20 minutes.
  3. Transfer the batter into a squeeze bottle with a fine tip opening.
  4. Heat the ghee in a kadai. Once the ghee is heated, pour the batter of Jalebi forming a spiral shape. Let the Jalebis get fried on low heat.
  5. Meanwhile, take a bowl and heat the water along with sugar. Add cardamom and let it thicken till 2 string consistency.
  6. Dip all the Jalebis in the sugar syrup and let it stay for about a minute.

Preparing the Rabdi:

  1. Take a pan, heat the milk, sugar, vanilla beans, and pod on a low flame. Let the milk thicken.
  2. Once thickened, take the Jalebi in a bowl and pour the vanilla flavored rabdi over it.
