How to prepare Mattar Pulao:

Step 1) To make this tasty rice dish, place black peppercorns, cinnamon sticks, black cardamoms, bay leaves along with six green cardamoms & five cloves into a mortar. Pound with a pestle for breaking spices, fold into a muslin cloth & have with sufficient string for it for hanging over the rim of the vessel.


Step 2) Have rice & clean it into the running water, drain the water & place it into a different vessel. Have the muslin cloth along with the masalas into it & reserve for thirty mins.


Step 3) Drain at the cooking time & reserve the bouquet garni for further use. Pour three liters of the water into a deep-bottom pan & have the reserved bouquet garni along with salt.


Step 4) Stir it properly, pour the lemon juice into the vessel & bring it for boiling on moderate heat till almost cooked. Once cooked, drain the water and place the bouquet garni into any different pan.


Step 5) Sprinkle the kewra water with mace and cardamom powder. Close with a lid & put aside for around ten mins. Meantime, heat ghee into a frying vessel.


Step 6) Now have onions, saute it over moderate heat till onions get glossy and translucent. Have the garlic and ginger pastes, stir-fry till the onions are slightly golden.


Step 7) Now have green peas & then sprinkle salt, stir-fry for one minute, remove & then place it to the vessel with rice. Next, sprinkle the saffron & mix softly.

Galouti Kebab recipe with Rajma

Dish coming directly from the Hyderabadi cuisine is totally unmatched by any other recipe. This non-veg dish can easily convert as a nutritious vegetarian dish using kidney beans (Rajma).


Ingredients
  • Kidney Beans (Red) - 2 cups

  • Cashew Nuts - 15 (Full size)

  • Sunflower seed - 2 tbsp

  • Poppy seeds (khus khus) - 1 1/2 tbsp

  • Caraway seeds (shahi jeera) - 1 tps

  • Green cardamoms - 8

  • Black cardamoms - 6

  • Cloves - 4

  • Cinnamon - 2 inch stick

  • Saffron (kesar) - a pinch

  • Kewra water - 1/2 tsp

  • Pure ghee - 2 tbsp + for shallow fry

  • Chopped Ginger - 1 inch piece

  • Chopped Garlic - 10 cloves

  • Finely chopped Green chillies - 6

  • Grated Mawa (khoya) - 4 tbsp

  • White pepper powder - 1 tsp

  • Salt - to taste

  • Lemon juice - 1 tbsp

  • Fresh mint leaves - 1-2 sprigs

  • Onions cut into roundels - 2 medium size



Method


1) Take a cooker and boil soaked rajma (Soak for overnight) with a good quantity of water until it gets soft.
2)  First, dry roast cashew nuts, khus-khus, and sunflower seeds together. and then make a fine paste adding little water in a mixer.
3) Dry roast other ingredients like Green cardamoms, Black cardamoms, cinnamon, cloves, caraway seeds and make a fine powder.
4) Take 1/2 tsp kewra water and soak saffron.
5)  Now take a pan and put two tablespoons of ghee, following with ginger and garlic. After saute for a few seconds add green chilies and saute again for one minute.
6) Time to add rajma and cook for 3-4 minutes.
7) Now add cashew nut paste and mix well.
8) Time to add khoya, white pepper powder and salt as per taste. Continue stir-fry.
9) Keep the rajma aside for cooling. Then mash it into a fine paste. add spices powder and soaked saffron. Check salt. Add lemon juice and give it a good mix.
10) Make equal portions of the mixture, give a round shape and press them slightly.
11)  For Shallow frying, heat up ghee in a pan and cook properly from both the sides.
12)  Use mint leaves and onion rings for garnish and serve hot with your preferred chutney or ketchup.

Ingredients for Paneer Jalebi:
Cottage cheese - 300 gm
Sugar - 2 cup
Refined oil - 2 cup
Green cardamom - 1/2 tsp
Strand saffron - 6

For Dough:
Baking powder - 1/4 tsp

For the dish:
Milk - 4 tsp
All-purpose flour - 2 tsp

How to prepare Paneer Jalebi:
Step 1) Boil the water into a deep-bottom vessel on a high flame & combine into the sugar. Stir it till the sugar goes out fully. Place into a pinch of the powder of green cardamom & allow the syrup for boiling. Stir it for sometimes & have it into the saffron. When the syrup has the 1 string consistency, switch off the flame.

Step 2) Then, have a dough kneading dish & have all-purpose flour into it with the baking powder, cottage cheese and cardamom powder. Combine all of them & pour sufficient water for kneading the smooth dough.

Step 3) Have a small quantity of cottage cheese dough & prepare the thick-long rope kind of structure from that. Wind the dough in some circular motion of around 2 rounds & have equal gap between each round. Do this process until all the dough gets done.

Step 4) Then, place one kadai over a high flame & heat some oil into it. Once the oil is sufficienly hot, smoothly put those jalebis into the kadai & then deep fry it till it gets golden. When the jalebi is prepared, soak it into the ready cardamom-sugar syrup. Have the syrup pan aside & close it with the lid.

Step 5) Post some hours, put a pan over a moderate flame & heat the syrup along with the soaked jalebis for around two to four mins, and now switch off the flame. Close the pan usidng a lid once more for 30 minutes & then open it, you would notice thar the jalebis have turned bigger.
